Cookery Student Wins Skye Beef Award

Congratulations to Professional Cookery student Amy-Louise Kane who has won the Skye Beef Recipe Award 2019 sponsored by SkyeConnect and SAC Consulting Portree.

Amy-Louise's winning dish of local Suckler beef was partly inspired by a twist on a childhood favourite. "I didn't want to overpower the Suckler beef but instead complement its flavour. My twist for this dish was something that I grew up with and still love to this day - swede, as the light and creamy texture balances the flavours," she reveals.

She added: "It was a joy to create, I learned about new key features and ingredients and am happy I could take part!"

One of the competition judges, Calum Montgomery who is Chef Patron of Edinbane Lodge, explained before the event that he would be looking for well-balanced flavours which let the quality of island ingredients speak for themselves. 

Skye Beef 2019, which aims to promote the benefits of homegrown cattle to the environment as well as the local economy, was kindly hosted by Sligachan Hotel.
